Turkey, Black Bean, and Sweet Potato Quesadillas

Ingredients

1 lb. ground turkey

 ½ onion, diced

 2 tsp. olive oil

1 cup shredded or finely chopped sweet potatoes

 ½ red pepper, diced

2 Tbs. water

1 cup canned black beans, slightly mashed

1 tsp. cumin

1 tsp. chili powder

 ½ tsp. garlic powder

 ¼ tsp. salt

 8 whole wheat tortillas

Toppings like shredded cheese, salsa and jalapenos
 

Preheat oven to 400. In a medium sauté pan heat the olive oil over medium heat and add the onion. Saute for 2-3 minutes then add the groundturkey. Stir while turkey browns. While turkey is cooking, gently mash the black beans on a plate. They do not have to be pureed, but I find kids eat them more easily if they are not whole. If turkey is fatty, drain fat.  When turkey is cooked add all the remaining ingredients. Allow to simmer for 10 minutes, stirring occasionally, until vegetables are tender. While filling is cooking, coat two cookie sheets with non-stick cooking spray. Place four tortillas on each sheet. Cover half of each tortilla with the filling and favorite toppings and fold in half. Bake the quesadillas for five minutes. With a large spatula, flip the quesadillas, and bake another 5-7 minutes until heated through and cheese is melted. Transfer quesadillas to cutting board and slice each into 3-4 pieces.
