Sweet Potato Pizza

"When getting kids to try new foods, I say, "The more it looks like something they like, the better the chances are they'll eat it." So this isn't pizza, but it is round and cut into wedges. And it is approved by my kids. You can get creative and try different toppings, but you'll need a fork to eat it." - Kathy,

2 medium sweet potatoes, peeled and shredded in food processor 
1/2 Onion, shredded
1/2 cup shredded cheese - parmesan and cheddar work well 
1/4 cup flour 
1/4 tsp. garlic powder 
1/4 tsp. salt 
2 large eggs 
non-stick cooking spray 
1/2 cup additional cheese 
1/2 cup ham or turkey or broccoli florets or topping of your choice 


Preheat oven to 400 degrees. 

In a large bowl combine shredded sweet potatoes, onion, 1/2 cup shredded cheese. 

Toss these ingredients together and add flour, garlic powder and salt. 

Crack the eggs into a small bowl and stir. 

Pour the eggs into the sweet potato bowl. 

Toss well to combine. 

Coat a baking sheet with non-stick cooking spray. 

Pour sweet potato mixture into middle of tray and spread it out into a circle about 1/2 inch thick. 

Put in preheated oven for 20 minutes until the bottom begins to brown. 

Remove "pizza" from oven and slide a metal spatula underneath it to loosen. 

Put on toppings and return to oven just until cheese melts, about five minutes. (or you can also put it under the broiler for a few minutes) 

Remove from oven, loosen bottom of "pizza". Allow to sit for 3 minutes. Cut into wedges and serve.
