||3 Cups Grated Raw Sweet Potatoes
1 Granny Smith Apple
1 Medium Onion
2 Tablespoons Grated Fresh Ginger
2 Teaspoons Lime Juice
Salt and Pepper to taste
1 Cup All Purpose Flour
1 Cup Milk
3 Tablespoons melted butter
Peel Sweet potatoes, apple, ginger and onion. Remove the core from the apple. Finely dice apple and onion. Grate ginger.
Combined apple, onion, ginger, lime juice, salt and pepper in a bowl and stir together. Let stand five minutes. Add grated Sweet Potatoes and stir, mixing until well combine.
In a separate bowl, mix milk into flour with whisk until no lumps then crack and add eggs, then melted butter stir until this forms a batter. Pour batter into Sweet Potato mixture, stir until well combine.
Heat a non-stick sauté pan over medium high heat and lightly grease. Spoon approx. ¼ cup of batter into heated pan to form pancake. Cook until edges begin to brown then flip, cooking until done.
Remove from pan and continue cooking batter until finished.
Yields approximately 15 pancakes
