2 large sweet potatoes, shedded
½ yellow onion, shedded
1 Tbs. Olive oil
Sea salt and pepper to taste
Preheat the oven to 400 degrees.
Shred the sweet potatoes and onion in a food processor.
Pour the olive oil on a baking sheet and toss sweet potatoes and onion to coat.
Sprinkle with salt and pepper.
Put sheet in preheated oven for 8 minutes. Using a metal spatula, toss the sweet potatoes. Continue baking for another 5-8 minutes until potatoes just begin to brown. Toss a bit more and serve.
