(Makes 4 Servings)
2 (8 ounce) sweet potatoes
1t olive oil
½ t curry powder
¼ t salt
¼ t ground cumin
1/8 t ground cloves
1/8 t pepper
Preheat oven to 425 degrees.
Peel sweet potatoes; cut each lengthwise into 12 wedges. Combine sweet potato wedges and remaining ingredients in a large bowl, toss gently to coat. Place wedges in a single layer on a baking sheet; bake for 25 mins or until very tender.
