2 - 3 large sweet potatoes
2 slices of bacon, cooked and chopped
1/3 cup plain non-fat Greek yogurt
2 Tbs. butter
salt and pepper to taste
Preheat oven to 350 degrees F. Pierce each sweet potato in several places with a fork. Place directly on the oven rack and roast until soft, 45 minutes to 1 hour. (Alternatively you can cube the sweet potatoes and boil for 10 minutes, but roasting gives more flavor.)
Transfer to a cutting board; let stand until cool enough to handle, about 10 minutes. Slip off the skins and cut the sweet potatoes into 1-inch slices; transfer to a large bowl.
Add bacon, yogurt and butter. Smash the sweet potatoes with a potato masher or fork until fluffy but some lumps remain. Season with salt and pepper.
Bonus Ideas: Start with the same recipe above, omit the bacon and yogurt and try adding the following
Orange and Honey Sweets
: cut back yogurt to 1/4 cup, add 1/2 cup orange juice, 1/2 tsp orange zest, 2 TBS. honey, and 1/2 tsp cinnamon
: Add 1 - 2 Tbs. horseradish for a zesty flavor
: Add 1/2 can chopped chilpotle peppers in adobo sauce
: Keep the yogurt, add 1/2 tsp. cinnamon, 1/4 tsp. freshly grated nutmeg, 1/4 tsp. ground cloves
